A computer vision system that would analyse and classify dried fruit, in particular dried peaches, pears and aoricots, was investigated. Each class (grade) of dried fruit was described by a normal probability distribution in a chosen colour feature space. In order to colour classify dried peaches the dark coloured core area was isolated from the peach using a Morphological Top-Hat transform. Because certain of the dried pear grades were graded according to the blemish size, a blemish thresholding technique, based upon the information in the colour band histograms was developed. The colour classification system and the blemish isolation process produced good test results.
